When people decide they want to eat healthier, they usually think about recipes, calories, or the latest diet trend. For me, eating healthier started with a completely different question: How do I make healthy eating possible when I can’t feed myself, cook by myself, or even open the refrigerator without help?

Living as a C3 complete quadriplegic means every meal is a team effort. My caregivers prepare the food, but I’m still responsible for the planning. If I don’t create a system, healthy eating doesn’t happen by accident. Grocery shopping becomes reactive. Fast food becomes easier. Convenience wins.

I finally realized that my biggest obstacle wasn’t paralysis—it was the lack of a repeatable process.

So I decided to build one.

This series follows my personal journey as I work toward becoming healthier, stronger, and more intentional about what I eat. I’m tracking my meals, monitoring my weight, reviewing research, experimenting with recipes, and using technology to simplify as much of the process as possible. Some days will be great. Other days will include pizza, late-night snacks, or meals that didn’t go according to plan. That’s real life, and I don’t intend to edit those parts out.

What makes this journey different is that I’m documenting the entire system, not just the results. I’ll share how I organize grocery shopping with caregivers, how artificial intelligence helps me plan meals, how I adapt recipes to fit my routine, what works after bowel care days, and which products are actually worth buying. If something saves me time, improves my health, or makes life a little easier, you’ll probably find it here.

I’m not writing this because I’m a nutritionist. I’m writing it because I’ve spent more than a decade learning how to rebuild a life after paralysis, and I believe healthy eating shouldn’t depend on having full use of your hands. It should depend on having a good plan.

If you’re living with paralysis, caring for someone who is, recovering from an injury, or simply trying to build healthier habits, I hope this journey encourages you to start where you are. You don’t need a perfect kitchen, unlimited time, or extraordinary motivation. You just need a system that’s realistic enough to follow tomorrow.

So Easy a Quadriplegic Can Do It

Years ago, I started saying, “Let’s make it so easy a quadriplegic can do it.” People usually laughed, but the idea stuck because it was true.

Every shortcut, every automation, every voice command, every grocery list, every caregiver checklist, and every AI prompt I create has one purpose: to remove unnecessary friction. If I can simplify something enough that I can successfully manage it despite having almost no physical movement, then chances are it will make life easier for everyone else too.

This week, don’t try to overhaul your entire diet.

Instead, change one thing.

Drink one more bottle of water each day. Replace one fast-food meal with something you prepared at home. Add a serving of vegetables to dinner. Plan tomorrow’s meals before you go to bed.
